Very quickly, we felt that we would need more than one brasserie to honor the terroir, to good French food, and to all that imposing French heritage that we pride ourselves on representing. This is how this Parisian brasserie, the second brasserie in our collective, came to life in the summer of 2021. If the place leans toward frenzy so much, it is in part thanks to the charcoal-fired cooking that operates behind the stoves.
